Apple pie spells the end of a Masterchef dream

Melbourne’s Tati Carlin has been eliminated from MasterChef Australia, crumbling during an epic apple pie pressure test set by world champion chocolatier Kirsten Tibballs.

Tati found herself in the challenge alongside Anushka and Tim following their performance in the invention test.

Tasked with Kirsten’s dessert, it was an epic challenge comprising of intricate layers of cardamom and cinnamon shortbread, sautéed apple, green apple jelly, chewy caramel, vanilla cream and chocolate sprayed cinnamon crumble with vanilla spheres, a transparent green glaze and chocolate stems.

The mother of one struggled with time during the lengthy cook, incorrectly weighing puree for her jelly and taking her caramel too far.

She accidentally turned her crumble into a pastry and was forced to ditch the chocolate spray to finish off her dish.

While the apple was fresh and the custard clean during tastings, there was an overwhelming bitterness from the crumble, and the dessert simply fell flat.

Since leaving the MasterChef kitchen, Tati has been working at Proserpina Bakehouse in Sassafras. She is also recipe testing for her Indonesian cookbook and working on a web series.
