Zumbo finds his final four

No-nonsense mum Kate took out Dessert Maker of the Day for the second time this competition for her Caramel Mousse Slice. “You took that caramel slice to the next level,” Adriano Zumbo said.

Two of the most consistent competitors found themselves battling each other in the Zumbo Test. Irene plated a Pavlova with Kiwi Sorbet and Pineapple Chantilly Cream but it missed the brief. “Your pavlova had a nice meringue but it wasn’t the reinvention we were expecting,” Rachel Khoo said.

Brogen created a Vanilla and Passionfruit Slice which Zumbo called “rubbery”. “It was a weird texture – it was playing with my mind.”

Inspired by days at the beach and an Aussie classic ice block, Zumbo unveiled the Frosty Fruit Flan for his Zumbo Test.

The shortbread tart shell contained a tropical compote and cremeux with orange and passionfruit gels bathed in a yellow glaze. It was decorated with an Australian flag thong made of tropical cremeux, a shortbread disc, a quenelle of frosty fruit sorbet, salt water foam, sea breeze mousse and sea shell and star fish jellies.

With three hours on the Dessert Factory clock, Irene and Brogan went hammer and thong to recreate Zumbo’s magical masterpiece. Irene battled with her confidence again, struggling to plate up all the elements.

It cost her dearly, scoring 14/20 – two points less than Brogen. Zumbo had some encouraging words of wisdom for Irene as she departed the Dessert Factory. “You’ve got that passion. I can see that. You just have to believe in yourself and always remember to throw that fear out the door.”

The 34-year-old finance analyst from Melbourne is still making magic in the kitchen and keen to make sweets her life. “Moving forward I really need to stay positive; I want to be more cool, calm and collected and pursue my dreams. I’m thinking about how much I’ve learned and grown. I’m actually quite proud of myself.”
